The super side dish that kids and adults love! These Ranch Potatoes have just 3 ingredients, and itโ€™s the best use for ranch seasoning mix that I know!

Iโ€™m forever looking for ways to get more vegetables on my plate, and roasting has become the go-to method. While olive oil, salt, and pepper is perfectly delicious, I like something with more punch and flavor to entice kids to eat more veggies. One pack of ranch seasoning, one bag of mini potatoes, and weโ€™re in business!

This side dish goes great with steak fingers and also my balsamic chicken!

Ingredients

  • Potatoes. One and a half pounds of mini red potatoes, scrubbed until clean. If there are any potatoes that are larger than the others, go ahead and chop them in half. Uniform size is best for roasting vegetables.
  • Ranch Seasoning Packet. If you have the packet form, we need two tablespoons of ranch seasoning powder. Typically, I buy the bottle at the bulk grocery store and I just measure out 2 tablespoons. Weโ€™ll sprinkle one tablespoon on before roasting, and then another tablespoon right before serving, just to really drive home the ranch flavors!
  • Oil. Since weโ€™re roasting these ranch potatoes at high heat, I use regular non-virgin olive oil for roasting. You can use your favorite high-heat oil that you prefer for cooking.

How to Make Ranch Potatoes

  1. Preheat the oven to 400-degrees Fahrenheit. Line a large sheet pan with parchment paper (donโ€™t use a silicone mat).

2. Rinse and dry off the potatoes. Place them on the sheet pan, drizzle with the oil and 1 tablespoon of the ranch seasoning. Toss to mix well.

3. Roast for 20 minutes, or until the potatoes are cooked all the way through and have crispy skins. This varies based on the size of your potatoes!

4. Remove from the oven, and sprinkle over the remaining tablespoon of ranch seasoning.

5. Toss well and serve garnished with fresh chives, if desired.

Leftovers/ Make Ahead:

If you have leftovers, store them in a food storage container in the fridge for up to 3 days. Reheat in the toaster oven or air fryer to maintain crispness. (Reheating in the microwave will make them softer). You can make these a few hours ahead of time, and keep them in a low oven until ready to serve.
