Ranch Potatoes

Ingredients

  • 1.5 pounds of mini red potatoes washed
  • 2 tablespoons olive oil
  • 2 tablespoons dry ranch seasoning mix divided use

Instructions

  • Preheat the oven to 400-degrees Fahrenheit. Line a large sheet pan with parchment paper (don’t use a silicone mat).
  • Rinse and dry off the potatoes. Place them on the sheet pan, drizzle with the oil and 1 tablespoon of the ranch seasoning. Toss to coat.
  • Roast for 20 minutes, or until the potatoes are cooked all the way through and have crispy skins. This varies based on the size of your potatoes!
  • Remove from the oven, and sprinkle over the remaining tablespoon of ranch seasoning, and serve hot.
