- 1.5 pounds of mini red potatoes washed
- 2 tablespoons olive oil
- 2 tablespoons dry ranch seasoning mix divided use
Preheat the oven to 400-degrees Fahrenheit. Line a large sheet pan with parchment paper (don’t use a silicone mat).
Rinse and dry off the potatoes. Place them on the sheet pan, drizzle with the oil and 1 tablespoon of the ranch seasoning. Toss to coat.
Roast for 20 minutes, or until the potatoes are cooked all the way through and have crispy skins. This varies based on the size of your potatoes!
Remove from the oven, and sprinkle over the remaining tablespoon of ranch seasoning, and serve hot.
