Mint Chocolate Chip Donuts

Iโ€™m not really sure what to say here, exceptโ€ฆI had a craving. A fierce mint chocolate craving. Aย pint of mint chocolate chip ice cream jumped into my grocery cart last week (on its own accord, I swear!), and itโ€™s really just been one downhill, slippery slope ever since. And somewhere along the lines, I got tired of icy cold and wanted my craving to be warm and fluffy. So, I present these as evidence that Iโ€™ve been eating too many chocolate chips. And using mint frosting as a substitute for brushing my teeth. (Kidding. Kind ofโ€ฆ)

Mint Chocolate Doughnuts

We have this super hipster donut place in the town that I live. The problem is, the donuts really arenโ€™t that good. And that makes me so sad. I want to love your $4 donuts. But I just donโ€™t. When we get a craving for perfect donuts, we head to a doughnut shop that hasnโ€™t changed what theyโ€™re doing since the 1950s, including the prices, and they are perfection. (Itโ€™s called Worldโ€™s Fair Doughnuts, if youโ€™re ever in St. Louis). Anyway, a classic donut shop does the classics right, but lacks the flair of fun, new flavors. So Iโ€™m here with soft, fluffy chocolate baked donuts topped with a zippy mint frostingโ€ฆthat totally doubles as toothpaste. Iโ€™m kidding! Or am I?

I have a baked donut pan that holds 6 donuts. When I bought it, I doubted I would use it that much, but as it turns out, I use it a lot. Iโ€™ve made Chocolate Chai Donuts, Crumb Donuts, Cranberry Cornmeal Donuts, and Pumpkin Donuts with Honey Glaze). If that doesnโ€™t convince you that you need a donut pan, Iโ€™m not sure what will! Hereโ€™s the one I use, if youโ€™re feeling the donut urge.

Mint Chip Donuts

Mint Chip Donuts

These baked donuts are so delicious, you'll need more than one!

Prep Time 20 minutes
Cook Time 8 minutes
Total Time 28 minutes

Ingredients

  • 3/4 cup all-purpose flour
  • 1/4 cup cocoa powder
  • 1/4 cup + 2 tablespoons granulated sugar
  • 1/2 teaspoon baking soda
  • 1 large egg, beaten
  • 1/2 teaspoon vanilla extract
  • 6 tablespoons buttermilk
  • 3 tablespoons vegetable oil
  • 1/4 cup mini chocolate chips

Mint Frosting:

  • 2 cups powdered sugar
  • 1/2 teaspoon peppermint extract
  • 2 tablespoons buttermilk, plus more as needed
  • mini chocolate chips, for garnish
  • 2 drops green food coloring (optional)

Instructions

  1. Preheat oven to 375, and grease a donut pan with a capacity of 6.
  2. In a medium bowl, sift together the flour, cocoa, sugar, and baking soda. In a small bowl, whisk together the egg, vanilla, buttermilk and oil. Combine the wet and dry mixtures and stir just until no streaks of flour remain.
  3. Finally, stir in the mini chocolate chips. The batter will be thick.
  4. Spoon the batter into the donut molds, smoothing the surface.
  5. Bake for 8 minutes, or until they spring back when touched.
  6. Immediately after coming out of the oven, dump the pan onto a cooling rack, and let the donuts cool while making the frosting.
  7. To make the frosting, whisk together all ingredients (minus the chocolate chips) until smooth. Add additional buttermilk as needed to make a smooth consistency. Spoon the frosting over the donuts and top with the mini chocolate chips.

    As soon as I read โ€œhipster donut place,โ€ I knew immediately to which shop you were referring. Ha. And sadly, I have to say that I agree with you completely. I wish they were better; I want to love them. But I just canโ€™t. Theyโ€™ve got some good ideas, but they lack the proper execution, IMHO. Okay, Iโ€™ll stop talking about that now because I donโ€™t like talking sh*t about anyoneโ€ฆ :P

    Your donuts look awesome, and I like the idea of mint and chocolate together in donut form. Iโ€™ve got a donut pan that I bust out on occasion; I think Iโ€™ll need to use it to make these soon! :)

      Thanks so much! I think the โ€˜hipster donut placeโ€™ does a good Gooey Butter Cake, but thatโ€™s about it. Iโ€™m glad Iโ€™m not the only one!

    I made these today. They were fantastic!! To lower the sugar content, I made 1/2 the amount of frosting and drizzled it over the donuts. They still tasted heavenly.

    These were really good! Mint Chocolate Chip is my favorite ice cream so making these was a no brainer. I love that itโ€™s a recipe for 6 donutsโ€ฆ2 a piece for breakfast and 1 more a piece for dessert tonight. Rather than spooning the batter into each donut moldโ€ฆI take a quart size freezer ziplock bagโ€ฆprop it up in a measuring cup with the top folded backโ€ฆpour the batter into the bag, zip it closed, and cut a half inch opening in one cornerโ€ฆthen pipe the batter into each mold. Thanks, Christina for developing these small batch recipes. Iโ€™m definitely going to try your other donut recipes.
