Lemon creme brulee for a great Motherโs Day dessert for two.

Ahhh, the month of May. We get Motherโs Day, tulips, daffodils and Springtime all rolled into one month. Itโs a good time to be a Mama. And to celebrate your own Mama!
You know your Mama best, but no matter what, I really think sheโd love this lemon creme brรปlรฉe. Itโs Springtime in a cute little ramekin, plus itโs so fancy. Your Mom deserves it!
If it were me, I would make a little picnic for you and Mama, and pack the chilled lemon creme brulee for dessert. Toss the culinary torch in the picnic basket, and torch them on-site. (The sugar crust softens as it standsโtorch creme brรปlรฉe just before serving, always).
This is the torch I use. I love it because itโs tiny.
Motherโs Day and Lemon Creme Brulee:
Last year was my first Motherโs Day as a Mama, and it was everything Iโd ever hoped for. I had a 2-week old infant who was nursing โround the clock, but I snuck away to grocery shop alone. It was so glorious, even though I was only gone for 37 minutes.
The people at the market noticed Iโd been missing for 2 weeks and welcomed me back, with my tired eyes and baggy Mom clothes. If I remember correctly, the check-out guy at Trader Joeโs even gave me free flowers.
Now that my sweet little babe is ONE, Iโm looking forward to a more relaxed Motherโs Day this year. I want baby snuggles, lots of play time with my main girl, and I want to tickle her ribsย until she has a laughing fit. Itโs the best.
I love my girl.
But I also love lemon desserts. Especially mini lemon layer cakes.
Plus, lemon cheesecake bars, and anything made with my microwave lemon curd. I wouldnโt mind waking up to a small batch of lemon scones, too!
But mostly this lemon creme brulee. Mostly. Fine, Iโll take all of the lemon desserts today!

Lemon Creme Brรปlรฉe
Two ramekins of creme brulee.
Ingredients
- 3 large egg yolks
- 1/2 cup heavy whipping cream
- 1/4 cup sugar, plus 2 teaspoons
- zest from 1 small lemon
Instructions
- In a glass bowl, whisk together egg yolks, cream, 1/4 cup sugar and lemon zest.
- Pour into the ramekins. Place the ramekins in a 8 or 9" square glass baking dish. Make a water bath for them to cook in by pouring 2 cups of very hot water into the dish, or enough to come up about 1/2" on the sides of the ramekins.
- Bake at 300ยฐ for 40-50 minutes. The custards are done when only the middle is slightly jiggly.
- Cool the custards in the water bath, then cover them with plastic wrap before moving them to the fridge for at least 8 hours.
- When ready to caramelize the sugar with a kitchen torch, sprinkle 1 teaspoon of sugar over each custard. Melt the sugar with the torch until it is browned and hard. Serve immediately.

Happy First Motherโs Day! What a gorgeous time to have a baby. As a mother of 2 (grown) boys (and umpteen dogs, horses, etc.), I can tell you that all the people you meet will have opinions that are wrong for you. All the books (mostly written by menโฆwhatโs with that?) are wrong for you. How did mothers raise their kids before all these things happened? They went with what worked for them, and thatโs just what you need to remember. If it feels right, go for it. Your little daughter will also let you know if itโs not right for her, but thatโs not a worryโฆyetโฆenjoy!

I had to make chuckle at this because these are all the same thoughts/feelings right after having my son 10 months ago. I gained a new respect and love for all Mamas. It also made me wonder how Moms are mean to other Moms. We are all fighting the same battle and doing the best we can. We need too support each other. Oh and I also could not understand not knowing you were pregnant. How?!
I know you have have heard this a million times but ENJOY this time and donโt feel guilty for not getting other stuff done. I remember thinking, if this all I do when he is a baby I will get nothing done and not have a life. So I pushed myself too hard and got so stressed in trying to do it all. Now I sit here with my teething 10 month old napping in my lap, which NEVER happens anymore so I am soakinng it in.
