So, by streaming in the sugar, I mean add it a little at a time. Don’t just dump the entire amount in at once. Slowly add it while beating.
Sure, you can add salt.
Couple of questions.
1. The recipe states to “stream in” the granulated sugar but that wording usually is meant for liquids. Did you mean to stream in the honey? Or to add/pour in the granulated sugar? I’m not sure if the order in which the honey or sugar go in even matters but thought I’d check.
2. The flavor is great of the bread but thought it unusual that there”s no salt in the recipe. It’s woefully lacking in salt. Was maybe a pinch of salt missing from the steps above or was the recipe intended to use salted butter but maybe unsalted butter was a typo?

Upon a quick Google search, you will find substitutions for applesauce…
Here are some foods you can use as a whole or partial replacement for applesauce in baking:
Pureed apples (which is basically just homemade applesauce)
Mashed sweet potatoes.
Pumpkin puree.
Mashed banana.
Other fruit puree (such as Asian pear puree, berry puree, or pureed prunes)
Peanut butter.
Plain Greek yogurt.
