Banana cookies with cream, and so good and reminiscent of banana cream pie! Two thin vanilla wafers smushed with banana cream filling; recipe makes 5 cookie sandwiches.

This house needs an intervention.

We (Mr & Mrs Dessert For Two) are addicted to work.ย  We lack the ability to sit still, relax and take it easy.ย  After working hard Monday through Friday at our day jobs, we tackle to-do lists on the weekend that are often the length of a Southern poetโ€™s musings on forbidden fruit and the opposite sex.ย  If I told you everything we did this past weekend, you would faint.ย  Ready?ย  Weโ€ฆโ€ฆcleaned and organized the entire basement, built 3 shelves, rewired an outlet, built a work bench, assembled and hung a cabinet for the guest bathroom, I baked and photographed 3 desserts, did 3 loads of laundry, cleaned and mopped all floors, went to the hardware store twice, made a craft area in the basement, went out to dinner with sweet friends, went to church, and more. ย Itโ€™s hard to believe so many tasks can fit into a 48-hour weekend.

We did watch a football game or two, but we were up during the commercial breaks working on something.ย  And even while we were sitting, Iโ€™m quite positive we were both mentally scanning the to-do list.

It has got to stop.

Luckily, this weekend weโ€™re headed to Chicago for a little getaway. ย If I get to eat deep dish pizza at Ginoโ€™s East, itโ€™ll be a stellar weekend! Also, if you hail from Chicago, or have strong feelings about which Chicago deep dish pizza is the best, please let me know in the comments! Iโ€™m open for recommendations on our pizza adventures!

Banana cookies with cream:

I made these cookies last weekend because I had a craving for a banana cream pie and banana pudding. ย Clearly, I didnโ€™t have time for either, so I improvised.ย

I created a scaled down version of homemade vanilla wafers,ย whipped some cream and folded in a mashed banana.ย  The flavor profile is spot-on.ย

If you do have time for banana pudding, try my caramel banana pudding for two.

Theyโ€™re great at room temperature (albeit messy), but even better frozen.ย  Eat them within 2 days because the banana flavor starts to dominate past then. ย I donโ€™t think youโ€™ll have any trouble putting away 5 cookie sandwiches in 48 hours. We didnโ€™t!

Banana Cookies with Cream

Homemade vanilla wafer cookies smushed with banana cream filling. Recipe makes 5 cookie sandwiches.

Prep Time 25 minutes
Cook Time 16 minutes
Total Time 41 minutes

Ingredients

For the Vanilla Wafers:

  • ยฝ cup flour
  • ยฝ teaspoon baking powder
  • โ…› teaspoon salt
  • 6 tablespoons unsalted butter, softened
  • ยผ cup sugar
  • 2 teaspoons vanilla
  • 2 teaspoons heavy cream

For the banana cream:

  • 1/4 cup cold heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 small very ripe banana, smashed

Instructions

Preheat the oven to 350ยฐ. In a small bowl, stir together the flour, baking powder and salt.

In a medium bowl, whisk together the softened butter and sugar. When the sugar is dissolved, add the vanilla and heavy cream. Whisk together very well. Add the flour and fold together with a spatula. Chill the batter for about 20 minutes before proceeding.

Scoop the chilled batter out onto a baking sheet using 2-teaspoon scoops--you should get 10 cookies. Chill the dough balls another 10 minutes.

Press the tops slightly down to encourage a flat not domed cookie. Bake for 14-16 minutes, or until edges of cookies are browned.

Let cookies cool completely. Once ready to serve, whip the cream and powdered sugar together until soft peaks form. Then, stir in the mashed banana. Spread the banana cream between two cookies, sandwich together and serve!

These sound, but mainly look, so delicious. Have fun in Chicago, as I told you on Twitter, I was just there last weekend for my first trip. Have you been? I wrote up a long post on all the things I did if you need any ideas, but Iโ€™m sure youโ€™ll figure it out! Xo Jenna

I hope Chicago was great! Reading what you did on the weekend sounds way too exhausting. I went apple picking and had brunch and Iโ€™m still exhausted (sadly Iโ€™m not kidding). I donโ€™t know how people work full-time and have a blog. Crazy. That banana filling sounds so good! Love how simple it is.
