I, too, noticed the omission. I emailed Christina about it, but am guessing from the lack of response to your query that I won’t get an answer either.
Anyway, I looked at another recipe for quiche for two that I have. It looks like this recipe should call for one egg. Hope this helps!

So quick, easy, and the perfect addition to any meal when you feel like you just need a little something extra. Crispy-dry on the outside, tender and moist on the inside. Yum!

After I leave, she will enjoy the option of cooking smaller portions to share with my sister, a friend or for herself one night and eating the other portion another time.
