Spicy turkey burgers with creamy feta sauce on top!

Letโsย talk about your grill skills for a hot minute. ย It just took all my effort not to type โgrill skillz.โ ย If Iย have yourย cell phone number, you know all about my texts with proliferous zโs. ย Sorry.
Moving on!
Are you excited for grilling season? ย Do you like to cookย outside just to keep the heat out of your house? ย Are you a grilling aficionado that pines for summerย all year long? ย Do you hoard charcoal? ย Are you my redneck neighbor behind me in the woods who grills ALL meals outside whilst blaring 80s rock ballads?
The way I see it, the grill offers a component to your foodย that just ย canโt be accomplished when cooking indoors: ย smokiness. ย Food likes to be smoky. ย Letโs think about a hot dog with some black char from the grillย versus a hot dog boiled in water. ย Are you with me? ย The two cannot compete. ย You couldย sear a burger in a cast iron skillet indoors, but to really get the char on the outside to seal in the juices, your smoke alarm will go off. ย Trust.
Personally, Iโm a turkey burger aficionado. ย I think Iโve made every burger Jessica has ever posted. ย I love them all. ย This one with Gorgonzolaย and chili slaw made me sing. ย Consider my fiery turkey burgers with creamy feta sauce a riff on herย recipe.
I jam-packed the turkey meat with spicy flavor: ย smoked paprika, cayenne, and oregano. ย I stuffed it on an onion-flecked burger bun (the stuff of my dreams). ย Then? ย I made your taste buds a cooling, creamy feta sauce just in case the heat was too much for you. ย However, I flubbedย and dashed some cayenne in the feta sauce too, but it was an accidentโฆunless you crave the burn.
Do food bloggersย really eat what they cook? ย OH YES.
Sometimes, I finish the photo shoot, pull up a chair, and rest my elbow on the remote control shutter while I chow down. ย I suggest you do the same.

Dinner for Two: Fiery Turkey Burgers with Creamy Feta Sauce
Makes 3 burger patties or 2 large ones.
Ingredients
For the burgers:
- 1 pound ground turkey (as non-lean as possible)
- 1 large egg, beaten
- 1/4 teaspoon cayenne pepper
- 1 teaspoon smoked paprika
- 1/2 teaspoon dried onion powder
- 1/2 teaspoon dried oregano leaves
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 3 onion-flecked burger buns
- lettuce, for serving
- tomato, for serving
- onion, for serving
For the feta sauce:
- 1/2 cup crumbled feta cheese
- 1/4 cup heavy cream
- dash of cayenne
Instructions
- In a large bowl, combine the ground turkey, egg, and spices. Mix well with your hands. Shape the meat into 3 patties, making sure to make divot in the center of each to account for expanding during cooking.
- Preheat the grill to medium-high. Dip a paper towel in the olive oil, and grease the grates of the grill once hot. You should be able to hold your hand 6" from the surface of the grates for no more than 5 seconds before proceeding. When hot, place the burger patties on the grill, and close the lid.
- Cook the burgers for 5 minutes on each side, or until they register 165-degrees F internally. Remove from heat and cover until serving.
- Meanwhile, stir together the feta, cream, and cayenne.
- Slice the burger buns, and serve each patty on top. Garnish with lettuce, tomatoes, onion, and creamy feta sauce as desired.
Notes
I call this 'dinner for two' because most men gobble up two of these spicy burgers. Plus, it uses the entire 1-pound package of ground turkey. If you really only want to make 2 burger patties, use 2/3 pound of turkey and 1 egg yolk.

I need more turkey burgers in my life, especially with the great ground beef shortage I keep hearing about. I am all about the heat, so bring it on! Iโve been working on my grill skillzzzz (that was just for you!) and Iโve actually gotten pretty decent on it. But donโt even talk to me about changing the propane tank. Thatโs terrifying.

These are the absolute BOMB DOT COM. So delicious- we made them with ground chicken instead of turkey, and added cheese and sriracha. I couldnโt help but have TWO burgers ????????????
