OH, HI. Iโ€™m alive. Yes, please, and thank you. Iโ€™m home from New York, and still recovering a bit. I severely underestimated the exhaustionย I would face being 7 months pregnant whileย running to and from meetings and cabs for 3 solid days in New York. Nevertheless, I had an absolute BLAST, and I canโ€™t wait to tell you all about it in a โ€˜Checking Inโ€˜ post this weekend.

I took some timeย off when I got home, and did absolutely nothing for a few days. However, I did snuggle my dogs, and make a giant pot of lasagna soup. I feel so much guilt for boarding the dogs while I travel, even though their daycare is quite luxuriousย with play time and attention in excess. They probably love it better than me, but I thought about them constantly while in New York. Our friends keep telling us that once the baby comes, we will not care about the dogs at all. At this point, I canโ€™t imagine that, but they said thatโ€™s exactly how they felt, too. Iโ€™m going to let โ€˜the boysโ€™ live it up and be the centers of my universeย until then, though :)

One of the brands Iโ€™m working with this year is Omaha Steaks. I really appreciate that you guys let me work with brands to help โ€˜keep the lights onโ€™ around this place. In the blogging world, ad revenue fluctuates. Working with brands under contract is guaranteed income for me. So, thatโ€™s why I do it. But, believe me, I only work with brands that sell wholesome, raw ingredients that I feel good about putting in my body.

I created this recipe for Cowboy Steak with Brussels Sproutsย for Omaha Steaks, and I know youโ€™ll love them. The steaks have an easy rub featuring coffee to make them extra smoky. And since itโ€™s way too cold to grill, weโ€™re going to employ our trusty cast iron skillet.ย I want your eyes to be free to watch the steaks cook, so I made sure the sprouts were easy and hands-free. After a quick toss in olive oil and steak seasoning, they go into the oven to roast to perfection. You donโ€™t even have to check on themโ€“just focus on getting that perfect medium-rare on your steak. Or, rare. Or,ย well-doneโ€”however you love your steak, really! If Brussels sprouts arenโ€™t your bag, substitute any vegetable you like.

One weird thing I learned when testing this recipe is that the larger the sheet pan you use, the faster the vegetables will cook. Keep that in mind. I use mini quarter-sheet pans, but the most common sheet pan youโ€™ll find is a half-sheet pan. Give the vegetables a quick peek in the last 3 minutes of cooking to be safe.

Cowboy Steaks

Cowboy steak recipe with coffee rub, plus easy oven roasted Brussels sprouts for two.

Prep Time 5 minutes
Cook Time 20 minutes
Total Time 25 minutes

Ingredients

  • 2 10 oz London Broil Steaks
  • 2 tsp coffee grounds
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon garlic powder
  • 1 teaspoon dried onion powder
  • 1 tablespoon vegetable oil
  • 1 pound Brussels sprouts, cleaned, trimmed and sliced in half
  • 2 tablespoons olive oil
  • 2 teaspoons steak seasoning mixture

Instructions

  1. First, preheat a 10-inch cast iron skillet over high heat.
  2. Once the pan is hot enough that you can only hold your hand a few inches from the surface for a few seconds, turn the heat down to the medium.
  3. Meanwhile, combine the coffee grounds, salt, pepper, garlic and onion powders.
  4. Rub this mixture very generously on the steaks, including the sides.
  5. Once the pan is hot and the heat has been turned down to medium, add the vegetable oil to the pan.
  6. Carefully tilt the pan to coat it evenly.
  7. Add the steaks and do not move them for at least 5 minutes.
  8. Have a meat thermometer handy.
  9. After 5 minutes, flip the steaks. Depending on how you like your steaks, cook them another 4-9 minutes. I used a meat thermometer to ensure 140-degrees for medium.
  10. When the steaks are 5-degrees below your ideal range, remove them from the pan and wrap in foil. Let rest for 10 minutes before serving.
  11. Meanwhile, preheat the oven to 400-degrees.
  12. On a half-sheet pan, add the Brussels sprouts, steak seasoning and olive oil. Toss everything with your hands to coat.
  13. Roast the sprouts for 13-16 minutes, checking towards the end of the cooking time.
  14. Serve immediately.

    Could you kindly qualify the cut of meat of a London Broil? It looks a good deal different, by the pic, than the London Broils that I am used to seeing. By the pic, it almost looks like a loin cut. Is that right?

    I just found this recipe on Pinterest and decided to give it a try. It ended up being an amazing dinner! The flavors were amazing for both the steak and brussel sprouts and the two complimented each other so well. I was a bit worried about using coffe grounds in the steak rub but felt adventerous and am glad I did! I will def be making this for dinner again soon! Thanks for the recipe!

    When you say โ€˜coffee groundsโ€™ I assume you mean โ€˜ground coffee.โ€™
    Coffee grounds are what you have after youโ€™ve brewed coffee so I assume you mean fresh ground coffee.
