Hibiscus Margarita Popsicles @dessertfortwo

Why so many boozy pops? Because, my friends, if I sit on my deck with a cocktail in one hand and a baby in the other, the neighbors might judge. However, if I sit on the deck with a popsicle in one hand and a baby in my lap, no one judges. They think, โ€˜hey, sheโ€™s enjoying a delicious coconut popsicleโ€™, when really, Iโ€™m enjoying a Boozy Horchata Pop. In this case, I look like Iโ€™m enjoying a grape popsicle, but what Iโ€™m actually eating is approximately 13.5 times betterโ€“a hibiscus margarita on a stick. Oh Lordy.

Iโ€™ve beenย into hibiscus since before Starbucks made it so popular with their Passion tea. My roommate in college was from Mexico, and she would make tallย pitchers of what she called โ€˜agua de jaimaicaโ€™.

So, a hibiscus margarita would have um, hibiscus tea, lime, triple sec, and tequila. We have all that here, except with an alcohol level that wonโ€™t prevent freezing. That is a nice way of saying donโ€™t melt these and expect a buzz. You can still rub them with a lime and dip them in salt, like you would a margarita, though. I think thatโ€™s fair.

So, cheers to deck drinking sans judgement!

Yield: 6 popsicles

Hibiscus Margarita Popsicles

Hibiscus Margarita Popsicles

These ice pops are for adults only!

Prep Time 15 minutes
Cook Time 5 minutes
Total Time 20 minutes

Ingredients

  • 2 cups water
  • 1/3 cup dried hibiscus (agua de jamaica) flowers
  • 4 tablespoons granulated sugar
  • juice from 1/2 a lime
  • 1 tablespoon tequila
  • 2 teaspoons triple sec (or Cointreau)

Instructions

  1. Bring the water to a rolling boil. Remove from heat, and stir in the flowers. Cover and steep for 15 minutes.
  2. Strain the flowers from the tea, and then whisk in the sugar. Whisk very well to dissolve.
  3. Next, stir in the lime juice and alcohols.
  4. Taste. Smile.
  5. Pour into popsicle molds, insert sticks, and freeze until solid.

    Oooh, so pretty! While Iโ€™ve never tasted hibiscus, I am ready try! it sure adds a gorgeous color and I know for sure that:

    a. I love all the recipes Iโ€™ve tried of yours so far, andโ€ฆ

    b. I love anything that resembles a margaritaโ€ฆ.(with the โ€˜rโ€™ slightly rolled!

    Jamaica is my. jam. Oh mommy. I love love love agua de jamaica and hated having to give it up for the first trimster. Jamaica margaritas = godsend. Jamaica margarita popsicles?! I think Iโ€™ll make a few of these and pack them for the hospital..

    Delicious! Iโ€™m mexican, so i drink โ€œagua de jamaicaโ€ all the time and I intoduce it to my neighbors in that way! with alcohol! haha was so funny! we have a lot of flavors for the water! you should look for tamarindo!! you will love it to! is a little bit mor work but it worths!

      Hi Lorena! Thanks for your comment! Love it! I do love tamarindo! I lived in Costa Rice for a long time, and drank tamarindo soda often! :)
