I used my 6-inch Fat Daddio’s regular round cake pan as I don’t have a springform that small, and lined it with parchment paper for easy removal. I only had one block of cream cheese on hand, so halved the measurements for the filling. I used pecans instead of graham crackers for the crust to lower carbs a bit. It turned out absolutely perfectly. This shortie cheesecake is delicious. Thank you for the recipe!

I’m a little worried…my 6-inch springform pan is a full 3-inch deep, and this cheesecake definitely bakes up to the top. Can you just remove some of the batter?

I love this recipe because it’s super easy and impossible to screw up.(hence why we stan the instant pot!!)

You can use a 6 inch x 3 inch push pan instead of the springform pan. No lock on the side so fits easier in the 3 quart pot.
