I combined your chocolate mousse recipe with this one, but cutting into layers, brushed lightly with maraschino liqueur and using the chocolate mousse in the middle along with a layer of raspberries. Then topped it off with the ganache and more fresh raspberries. It was very pretty and SO delicious. Can’t wait for the next one.

Did you see the section ‘our favorite cake toppings.’ There are other recommended frostings. But, if you want to make the ganache but don’t want to buy a pint of heavy cream, you could use full-fat coconut cream?

I made a raspberry syrup to add to the ganache, and made a raspberry buttercream for the middle. It was rich enough with the added buttercream that it could have easily fed 6-8 people. Great recipe for smaller gatherings when I don’t want to make a full size!
