Instead of going to the coffee shop, make this Gingerbread Latte that tastes just like the Starbucks version at home. Made with just brewed espresso (yes, you can absolutely use instant), ground cinnamon and cloves, and sweet syrupy molasses for that classic gingerbread flavor.

Iโ€™m committed to making lattes at home. Itโ€™s not just because I think Starbucks employees shouldnโ€™t have to see me first thing in the morning, or that I shouldnโ€™t beย trusted to drive that early. Or, even that Iโ€™m going to bring my crazy, barking dog in the car with me. While all of these things are true, I make lattes at home because Iโ€™m lazy.Also, my dog is a jerk to strangers. Baristas want to spit in the lattes of people like me. So, I will always make lattes at home.

I love my pumpkin spice latteย (with REAL pumpkin!), and my London Fog from a while ago still gets comments from other Fog lovers. This new addition to the familyโ€”the Gingerbread Latte? I deserve it. I keep reading about how healthy sugar is. Wait, molasses is healthy. The high-quality stuff. So, I feel like I should down a big spoonful every morning. And remember, we discussed that if you donโ€™t consume spices in desserts this winter, you will freeze to death. So, a healthy dose of ground ginger and cinnamon are always welcome to the gingerbread latte party.

Yeah, making a from-scratch latte every morning takes a few minutes of your time. But Iโ€™ve found that in those quiet moments, while the dog is chomping on his food, and my husband is styling that gorgeous head of hair of his, I like doing something for myself. Brewing tea or coffee, stirring spices and streaming in molasses isnโ€™t too hard, really. Iโ€™m half-asleep and blind in the morning, remember?

Yield: 2 drinks

Gingerbread Latte

Make your own gingerbread latte at home in less than 10 minutes.

Prep Time 5 minutes
Cook Time 3 minutes
Total Time 8 minutes

Ingredients

  • 4 shots espresso (or 3/4 cup strong-brew coffee)
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 2 teaspoons sugar
  • 2 tablespoons molasses
  • 1 1/2 cups milk (for foaming)

Instructions

  1. In a glass measuring cup, combine the coffee, spices, sugar and molasses. Use a whisk to dissolve the spices in the coffee very well. Divide between two mugs.
  2. Steam or froth the milk in a milk frother (or just warm it on the stove).
  3. Divide the milk between the two mugs, and serve immediately.

    This is really good! Right in time for the holidays, I was looking for a gingerbread latte recipe that I could make at home. Spicy-sweet and rich! I made it with Oatmilk (Barista Blend โ€” which is thicker), since my partner doesnโ€™t do dairy. It was sublime! Thank you!
