1st one was as stated in the recipe with fresh strawberries¹ “absolutely delicious”!
The 2nd one I tried the freeze dried strawberries and did it 2 ways. One using straight up freeze dried berries and the other I rehydrated the berries in sugar water. Straight freeze dried definitely a no go for me. The texture was all wrong and didn’t have hardly any strawberry taste. The rehydrated was a lot better but still not all that great.
The 3rd was with good quality frozen strawberries guaranteed fresh IQF frozen at peak ripeness. The extra water was a bit of an issue but I chopped the berries finely and sifted to get all the juice separate and reserved 2 TBSPs for later. Heated just the chopped berries until hot, not boiling, then added 1 level TBSP of corn starch to the cold juice and mixed really well before adding it to the hot berries with the sugar. As soon as it started to bubble nicely, took it off the heat and set the sauce pan in an ice bath to stop the thickening. Once cooled follow the recipe but if it’s too thick it can be let down with the reserved juice from earlier.
I didn’t need the extra juice so I stirred in a little bit of sugar to desired sweetness and used it as a drizzle into the homemade strawberry cake. Turned out almost as good as fresh berries and no flavor from the corn starch but there is just something you get from really fresh ripe strawberries that you just can’t get any other way.

¹when getting fresh strawberries take a moment and smell them. If they are good strawberries they will smell really strongly of strawberries. If you don’t get that strong strawberry aroma… I’ll leave it to you if you want to buy them or find a local grower to get your berries from.

Yes, you can use frozen strawberries to make the jam. But do not add just straight frozen berries to the frosting recipe thinking it will work. It will be soupy and not sweet. You can use frozen berries to make the jam and then use the jam in the recipe. Make sense?

I tried this with the freeze dried strawberries and it did not work. I think the dry powder of it made it gummy instead of light and fluffy. I’ll definitely try it again with the strawberry reduction, but that was just not good.

I put it on top of a strawberry cake, and while it wasn’t stiff enough technically, it made the cake delicious once cutting pieces and serving. The strawberry cream filling is also SUPER delicious as a dipper from fruit (reminded me of marshmellow fluff and cream cheese dip).

I was able to use it to pipe onto cupcakes just fine, just don’t expect super crisp peaks. Have to admit, I had some leftover and was therefore was forced to eat some straight off the spoon I loved it so much. Will absolutely use it again.

However, I defrosted my Strawberries, and then strained the juice off of them and chopped them up really good before I put them into the sauce pan with the sugar And didn’t add a splash of water. Turned out out great & soooooo delicious!

Omit the jam and crush two bags of freeze dried strawberries (usually about one ounce each) in a food processor and stir in after the butter and cream cheese are fluffy. Let sit for about an hour before serving so that they soak up the moisture.

I haven’t tried that, but my feelings are no. I use it for a cake filling all the time, but the strawberries can make it a bit too soft for actual piping. I’m sorry! Try searching google for a recipe that uses freeze dried crushed strawberries instead of jam.
