These peanut butter rice krispies treats for two made in a bread loaf pan. Theyโ€™re crunchy, sweet and chewy Rice Krispies treats made with peanut butter and mini marshmallows. Theyโ€™re made in a loaf pan for a small batch serving, but you can double and use an 8โ€ณ square pan instead.

Well, the time has come to introduce my kid to rice crispy treats. I realized this the other day when she was eating an unsalted dry rice cake and referred to it as a โ€˜rice krispies treat.โ€™

My kid actually thought a rice crispy treat was an unsalted rice cake/ hockey puck spread with all-natural sugar-free peanut butter infused with flax seed.ย Itโ€™s time to set the record straight.

So, I pulled out the marshmallows and began to make my small batch of rice krispie treats.

But, I had to includeย some kind of healthy thing in there. Itโ€™s just who I am. So, I plopped in some peanut butter for protein.ย I donโ€™t know why I never thought of this before but peanut butter in rice krispies treats is incredible.

Ingredients Peanut Butter Rice Crispy Treats

  • Butter. Unsalted or salted butter works, no real difference here because weโ€™re only using 2 tablespoons.
  • Peanut Butter. The best peanut butter to use is a regular, plain peanut butter. I donโ€™t like the ones that require stirring, or ones that have oil separated out on the surface. Regular, plain peanut butter is what youโ€™re looking for.
  • Marshmallows. You can use mini marshmallows or regular large marshmallows. You need 5 ounces total, which is 22 big marshmallows or 2 1/2 cups of minis. If youโ€™re looking for peanut butter Rice Krispie treats without marshmallows, try my healthy rice krispie treat recipe.
  • Crisp Rice Cereal. You know the one Iโ€™m talking about in the blue box, right?

How to Make Peanut Butter Rice Krispie Treats

  1. Gather ingredients: butter, peanut butter, marshmallows of choice, and the cereal. Line a loaf pan with parchment paper in just one direction. Give all sides a quick spray with cooking spray.
  2. In a small sauce pan, melt the butter, peanut butter and marshmallows over medium-low heat. Take your time, stirring frequently to prevent scorching.
  3. Once everything is fully melted and homogenous, add the cereal. Stir quickly to bring everything together (it becomes stiff and harder to stir quickly).
  4. Press the mixture into the prepared loaf pan, and let cool for one very long hour before serving. To serve, lift the parchment paper out of the pan, and cut into 2-4 pieces.

Recipe Variations

  • Serving Size โ€“ You might be wondering if you can double the recipe and use an 8-inch square pan. If youโ€™re new around here, I make small batch desserts.ย I made these peanut butter rice krispie treats in a 9โ€ณ bread loaf pan.ย You can slice them into 3 thick bars or 4 pieces, either way, and you still donโ€™t have an entire tray of them on your counter tempting you. Personally, in my house, we cut these bars in two and each of us enjoys a giant bakery-sized rice krispies treat.ย However, you can absolutely double this recipe, and make it in an 8โ€ณ square baking pan, the same pan you use for brownies and blondies.
  • Toppings โ€“ As mentioned, we love sprinkles on top to help sell them to picky eaters, but you can also add chocolate. You absolutely can; what a great idea! Use the recipe from my mini chocolate cake for the ganache topping.ย But also: donโ€™t miss the chocolate version of these rice krispies treats! โ€“> Chocolate Rice Krispie Treats!

Ingredients

  • 2 tablespoons butter
  • 1/4 cup peanut butter
  • 5 ounces marshmallows (about 22 big marshmallows or 2 1/2 cups of the mini marshmallows)
  • 2 1/2 cups rice krispies cereal

Instructions

  1. First, line an 8 or 9" bread loaf pan with parchment paper in one direction, and spray all sides with cooking spray. Set aside.
  2. In a 2 quart sauce pan, melt the butter, peanut butter and marshmallows over medium heat until melted and smooth, stirring frequently. Remove the pan from the heat, and stir in the rice krispies cereal. Mix very well!
  3. Press the mixture into the prepared pan, and let cool for an hour to set.

    Thank you so much for posting small-sized desserts! I live alone and I love to make sweets, but itโ€™s tough some time to scale a recipe down to 1/3 or 1/4 of itโ€™s original size and nobody needs a casserole-sized dish of baked goods sitting around to be gobbled down alone! These were fabulous. I went a little heavy on the peanut butter measurement and also added a sprinkle of salt and a dash off pure vanilla extract. Next time (and there WILL be a next time) I may throw in a handful of milk chocolate chips.
