This fun twist on chocolate bark includes a crispy upgrade! If youโ€™ve never added crispies to your bark, you are missing out! And yes-stale cereal totally works here! This crispy Easter Bark topped with robin eggs is the perfect homemade candy.

Every now and then, you come across a classic recipe with a new spin that is worth noticing. When I came across Tracyโ€™s recipeย for chocolate bark with rice krispies stirred in, I stopped in my tracks. Why had I never seen this before?

And just as I expected, it was incredible. Itโ€™s definitely one of those recipes that sounds exactly as good as it tastes. Itโ€™s almost as if the world no longer has a need for regular plain chocolate bark anymore!

This white chocolate bark is rich and creamy, punctuated with crispy little bits. It just doesnโ€™t get much better. Itโ€™s crave-able and addicting in the best possible way. I mean, honestly, thereโ€™s hardly anything that isnโ€™t better with little crispy bits of puffy rice cereal.

You could say I have a soft spot for white chocolate and Rice Krispies, because my cookbook, Dessert for Two, has a recipe for white chocolate toffee rice krispies treats that my Mom makes all the time.

Rice Krispies Chocolate Bark recipe

I made this crispy Easter bark as an easy way to spread Easter cheer to my neighbors. I have a neighbor whoโ€™s gluten free and one with a little boy who loves Easter candy. So, it was perfect! It was a big hit, and I can say that the entire block loved it!

You can use any type of Easter candy you love. I think even tiny jelly beans would be good because the bark is light and crispy and jelly beans would be a chewy, fruity note. If the Easter bunny hasnโ€™t visited your house and left candy for you yet, you could also use sprinkles.

Even though this recipe is so simple, I took step-by-step photos for you. Weโ€™re not doing much more than melting chocolate, stirring in Rice Krispies, and then adding crushed candy to the top, but it helps to see it all come together.

The one thing I will emphasize about this recipe is that you need to be ready to go in advance. This means gather everything and chop in advance. It makes the assembly so much easier!

The Ingredients

Chocolate Bark with Rice Crispies
  • White Chocolate Bark. Itโ€™s best to use โ€˜white chocolate barkโ€™ or โ€˜almond barkโ€™ or โ€˜white chocolate candy coatingโ€™ for this recipe. Real white chocolate is a bit finicky and hard to melt. Plus, it clumps up and seizes too easily. If you can find the white chocolate bark that comes with its own tray to melt it in, you will not have any mess to clean up!
  • Crispy Rice Cereal. One and a half cups of Rice Krispies cereal. I tested this recipe with stale crispies, and it totally worked!
  • Easter Candy. Top this crispy Easter bark with your favorite Easter candy. I use Robin eggs for the photos, but you can also use regular chocolate eggs or even small jelly beans!
  • Optional: Gel food coloring can be swirled into the bark to create color, but this part is totally optional!

How to Make Crispy Easter Bark

  1. Chop the candy you will be using for the topping, and set it aside.
  2. Then, melt the white chocolate bark. If it came in a tray to melt it in, use that. Otherwise, place it in a microwave safe bowl and melt at 50% power. Stir between each minute until fully melted. Itโ€™s best to follow the directions on the bag or box for melting the chocolate.
  3. Once the white chocolate is fully melted, stir in the Rice Krispies.
  4. Spread the mixture on a parchment paper or wax paper lined sheet pan. You want it to be a little than an inch thick. I use a 9ร—13-inch pan, and spread it almost to the edges.
  5. Optional: use a toothpick to swirl colors into the mixture before it sets.
  6. Sprinkle the easter candy on top, and press it lightly to adhere. Let the bark cool and set for at least 30 minutes. Then, break it up into pieces and serve.

Ingredients

  • 1 pound white chocolate bark, chopped
  • 1 1/2 cups crisp rice cereal
  • 2 drops yellow food coloring
  • 1/2 cup chopped Easter candy (I use robin eggs)

Instructions

  1. Line a quarter sheet pan (measures 9x13) with parchment paper and set aside.
  2. Melt the white chocolate according to package directions. Stir to ensure it is evenly melted.
  3. Stir the rice krispies cereal into the white chocolate; stir very well to combine.
  4. Spread the chocolate bark on the prepared baking sheet. Use a toothpick to swirl in coloring, if desired.
  5. Sprinkle chopped candy on top, and press it lightly to adhere.
  6. Let set for about 30 minutes before breaking into pieces.

    I love this idea! Iโ€™m typically not a big fan of white chocolate, but a good friend introduced me to White Chocolate Holiday Bark several years ago and now itโ€™s a tradition in my house. Itโ€™s similar to this โ€“ itโ€™s mostly white chocolate and Rice Krispies, with the addition of toasted coconut, toasted almond slivers, and chopped dried cranberries. I love the stuff so Iโ€™m sure Iโ€™ll like this too!

    This looks delicious! I want to run out to buy the ingredients and make this. In case your readers are not aware, Rice Krispies are Not gluten-free because they have malt flavoring in them, but Rice Krispies does, (or they used to- need to check) make a GF version of the cereal. My son and I both have Celiac disease so I have to read labels like crazy. Thanks for all your amazing recipes :)

    I use pure milk chocolate and the rice krispies. donโ€™t care much for using the white bark. the milk chocolate taste great

    What is the ingredient called โ€œWhite chocolate barkโ€ -? is it just white chocolate? itโ€™s odd that the first ingredient is the name of the thing that the recipe makees. Anyway, I looked in the grocery store couldnโ€™t find it so i just got white chocolate chips. Hope they will work!
