So much flavor and so easy to make! I did use a rotisserie chicken short cut but all the flavor came from the salsa verde and fire roasted chiles. Topped with pico and sour cream. Husband is raving! I can’t get over how easy they were to make (but I also had already had some shredded chicken in the freezer I defrosted) with not many ingredients! I used Xochitl Salsa Verde. Thank you so much for this recipe!!! Oh, and the sour cream and salsa verde also makes a good dip for tortilla chips! :)

I don’t have great luck freezing sour cream :( But, you could freeze them without the sauce? Since the sauce is so easy to stir together, just pour it on right before baking.
