]]>Hmm…they get a little soggy as they sit, because the fruit has sugar and it softens and seeps through the crust :( I wouldn’t make them the day before…if you have to, let them sit at room temperature, and then reheat in a toaster oven to crisp them back up.

Honestly, pie crust softens so much when stored, no matter how its stored. Your best bet is to store them uncovered at room temp and then pop in the toaster oven before serving to crisp them up :)
Freeze them unbaked, and then bake them from frozen, adding a few extra minutes.
