Especially loved that they are quick to make in the separate bowls and only needed the mixer for the frosting (also divine). The frosting sets well and holds its shape when refrigerated so that a short “warm up” on counter is perfect. Thanks Christina!

I just made these, devoured one already and I’m halfway through my second cupcake!!
I omitted the frosting because of extra calories, I doubled the recipe and just used 1/2 cup organic coconut sugar. I also used half organic spelt flour and half organic all purpose flour and used 1/4 cup whole buttermilk instead of sour cream. This was delicious! It came out like a carrot cake muffin with just a hint of sugar which is what I was going for!!!!
We have been tailoring desserts to cut down in the amount of sugar intake in our family and I have to tell you this ROCKS!!
THANK YOU!! I will definitely be making these again!!!
My husband loves them also!

I used GF flour (1-to-1) and replaced the coconut flakes with 1/3 cup almond flour and it turned out great. That way I didn’t have to add sour cream and it became dairy-free. I also only used cinnamon and ginger for spices. This will be my go-to carrot cake recipe!
