Iโ€™ve got a bone to pick with an 8-year old girl.

Look, Iโ€™m not the jealous type, but I really donโ€™t like other women cooking for my man.

Sometimes Mr. Dessert For Two takes a break from desserts.ย  He resists the sweets that come out of my kitchen.ย  And yeah, it kinda bugs me.ย  It makes me want to bake triple chocolate, caramel, crunchy, creamy, salty-sweet anything to tempt him.

When heโ€™s going through this strong-willed dessert-resistance thing and a cute little 8-year old girl in a brown vest selling Thin Mints outside the grocery store melts his heart, I get a little jealous. ย  Yes, I know Iโ€™m an awful person.

Last time he bought a box of Thin Mints, he left them in the freezer for 3 weeks while he was out of town.ย  Can I brag about my self-control, not touching that box for 3 whole weeks? My actions were more out of spite than self-control, though.ย  ย He came back into town for a friendโ€™s wedding and practically pushed me over to get to these cookies in the freezer.

I vowed then that I would make homemade thin mints for him.ย  I wanted them to be easy enough that I could make them at a momentโ€™s notice.ย  I wanted them to taste EXACTLY like the Girl Scout version.ย  And trust me, these really do.ย  Taste, texture, mint flavor, everything is identical.

Take Ritz crackers (donโ€™t use low-fat or low-salt, or Iโ€™ll cry), dip them in melted chocolate flavored with peppermint extract, pop โ€˜em in the freezer and enjoy.ย  Keep those cookie-pushers away from your man. ย Make these instead.

This recipe makes 20 cookies.ย  Itโ€™s a large serving size for Dessert For Two, but theyโ€™re that good.ย  Ten cookies each.ย  Go!

Homemade Thin Mints

Homemade Thin Mints

Easy homemade thin mints, made from ritz crackers!

Prep Time 20 minutes
Cook Time 5 minutes
Total Time 25 minutes

Ingredients

  • 20 Ritz crackers (don't use low-fat or low-salt)
  • 6 ounces bittersweet chocolate
  • 1 tablespoon shortening
  • 3/4 teaspoon peppermint extract (not the same as peppermint oil)

Instructions

  1. First, line a pan with parchment or wax paper.
  2. In a double boiler (or a bowl set over a pan of barely simmering water), melt the chocolate and shortening. When the mixture is smooth, stir in the peppermint extract. Using two forks, dip the cookies one at a time into the chocolate. Move them to the pan to cool.
  3. I personally think these taste best chilled in the freezer.

    These were amazingโ€ฆdidnโ€™t really want to use the shortening but Iโ€™m glad I did because it made the chocolate so silky. Cooled in the fridge then popped right into the freezerโ€ฆthese are awesome!

    I had a recipe for true mint like you find on the pillows in fancy hotels, but my recipe book was thrown away because of water damage. The recipe called for powdered sugar (I still call this sugar 10x). I guess I am telling my age but I truly like to kind this recipe again, because it makes a great after dinner breath freshener when you have a group of people over.     Iโ€™ve been making these for years! Only thing differentโ€ฆ.I use Andes Candies mint chips ( in baking section, by chocolate chips)โ€ฆ.these cookies made me a rock star with my grandkids and co-workers!! And too easy!!
