Crustless cheesecake in ramekins:

Iโ€™ve got a bit of a cheesecake problem, if that wasnโ€™t already obvious by the recipes in my Sweet & Simple cookbook.

Iโ€™m not going to count the renditions of cheesecake in the book, but some people have, and weโ€™re all very happy about it. We should probably start a cheesecake club (email me).

Itโ€™s hard not to be happy when cheesecake is near you. Itโ€™s hard not to slow down and enjoy life while eating it.

Speaking of slowing down, Iโ€™ve got big plans for this summer. Mainly: an attitude adjustment.

Iโ€™m going to relaxย and enjoy the pace of summer. Iโ€™m going to savorย every minuteย of the extra daylight hours,ย and show Camille just how wonderful this time of year is.

Iโ€™m vowing to lean into summer, and Iโ€™m going to roll with the punches when it comes to all of the traveling we have coming up for the book tour and moving to a new state. Itโ€™s a lot. Yes, but I have cheesecake. So itโ€™s probably going to be okay. Probably.

Cheesecake for Two, no crust, gluten free

No bake cheesecake in ramekins:

My To Do lists have been a little extreme lately. Iโ€™m leaving little time for relaxation during the day,ย because I take soย much joy in crossing things off my list (all the things!). But, I had a big warning flag the other day: I noticed my recently retired neighbor enjoying coffee on his deck at 10:30amโ€ฆand I was overrun with jealousy. I was jealous of his lazy morning! That he totally deserves for working for 40+ years!

So, weโ€™re going to make a few changes for the summer.

My first step is to write โ€˜make Camille happyโ€™ on my list everyday.

Cheesecake for Two with Berries

Iย started last week, and discovered that thereโ€™s something about making her happy that just calms me down for the rest of the day. Even if we all we do isย go the library and read books together while sitting in the play train. Or, even if itโ€™s just a quick trip the zoo to see the penguins or a drive to the Bird Sanctuary to check on her favorite vultures, the times when Camille is happy, Iโ€™m happy and calm, too. It spills over into the rest of my day.

Todayโ€™s happy moment was whenย ย Camille stripped down to a diaper and played in a water fountain at the park. My husband and I sat on the edge and just enjoyed watching her play. Our phones were in the car, the sun was shiningโ€“there was nothing to do in the moment except enjoy Camille. It was lovely and perfect, as a summer day should be.

Todayโ€™s other happy moment was enjoying this no bake cheesecake for two. Camille ateย all the fruit first, and then her little eyes lit up when she tasted the cold, creamy cheesecake.

Iย whip up these cheesecakes for two in ramekins in minutes. And while you might call me crazy because it doesnโ€™t have a crust, I say โ€˜hush hush, take a bite, babe, and then tell me what you were gonna say.โ€™

Cheesecake for two for 4th of July dessert

Start making crustless cheesecake for two now, and then scale them up for your Memorial Day and 4th of July crowds, because a red, white and blue dessert that tastes this good should be on repeat all summer long.

Cheesecake for Two

Cheesecake for Two

Cheesecake for two, made in ramekins.

Prep Time 5 minutes
Cook Time 4 hours
Total Time 4 hours 5 minutes

Ingredients

  • 4 ounces cream cheese, softened
  • 1/4 cup heavy whipping cream
  • 1/2 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • fresh fruit, for serving

Instructions

  1. In a small bowl, beat the cream cheese with an electric mixer on HIGH until it's soft and creamy, about 30 seconds.
  2. In another small bowl, beat the whipping cream until soft peaks form. Beat in the powdered sugar and vanilla.
  3. Add half of the whipped cream to the cream cheese, and beat on medium speed until combined. Repeat with the remaining half.
  4. Divide the cheesecake between two ramekins.
  5. Cover and refrigerate for at least 4 hours.
  6. Serve with fresh berries.

Notes

I'm using 4 ounce ramekins, but you can use small glass jars or anything similar.

    Thanks for the recipe. I have this in the fridge right now. I almost doubled the recipe because i had 7oz of cream cheese, so i upped the rest of the ingredients and put it in a 7โ€ณ fluted casserole. I have some fresh strawberries washed and ready.
    Will i be able to cut slices? Or is this a scoop and serve recipe? Either way is fine with me.

      It will be sliceable, but keep it very cold.

    This is delicious. Itโ€™s quick and easy. My husband doesnโ€™t like sweet very much, so I halved the sugar and it was a hit!
