I’m vegetarian, so I’ll be using agar agar which I’m not experienced with, but another site suggests using 1/3 to 1/2 of the gelatin called for. Fingers crossed!!
I know this is an older post, but as this is the first time making marshmallows for a lot of us, it would be really helpful to see pics of the different stages rather than just the finished product. Thanks :)

When we were trying to be all Kosher and everything, we used Agar (seaweed product) for gelatin. I think we used it one to one. It is available at health food stores and a little goes a long way.

I wanted to make some for my coworkers but some of them don’t eat gelatin. Do you have a recipe or suggestion on ways of substituting out the gelatin for agar agar or some other ingredient?

Hi Elaine!
You can use your stand mixer if you double it. I suggest not using it because it’s such a small amount of ingredients that the beater won’t touch the ingredients in the bowl. I have a MINI stand mixer and it works, but it won’t work for bigger mixers. Does that make sense? But if you’re doubling it, you should be fine! Let me know!! :)

I also have an almost full gorgeous bottle of Chambord, so I am set for the hot chocolate part too.

Just wonder why you state not to use a stand mixer. I don’t own a hand held mixer andI have made marshmallows before and used my stand mixer with no issues. I am going to double the recipe. Since I am using my lovely freeze dried raspberries I don’t want to mess them up. Can borrow a mixer if I have to. :-)

Hi Tara! Thank you so much for writing me and for buying my cookbooks :) You just made my day.

Ok, so many have told me this has happened to them. I think my hand mixer is an older model that beats more slowly than the new models. So, 10 minutes for me is perfect, but that may only mean 7-8 minutes for you. I’m glad that beating for less time still worked for you! I make marshmallows often, so I’ll keep an eye on the clock and update any changes I can think of that will help.

However, about halfway through beating, the marshmallow mixture started to climb the beaters of my hand mixer and I had to stop a few minutes early. Is there anything I can do to prevent this from happening, like using a different mixer speed (I started on low and increased to high after the syrup had been fully incorporated)? Despite not being mixed for the full amount of time, the resulting marshmallows taste great though! :)

Alas, I haven’t seen freeze dried raspberries before, but I can get strawberries. Have you tried making marshmallows with other freeze dried fruits?

I’ll put my hand up for a Valentines recipe request; duck sausages. Even after 30 years, I still remember a dish of duck sausages served on a bed of greens with a mustardy dressing. Succulent sausages, tangy salad. Satisfying without being overly filling. You don’t want to get sleepy on Valentine’s Day because of an overly heavy meal, do you?
