I am such a lucky girl.ย  I have had the pleasure of visiting Big Sur twice this year.ย  Twice!ย  I am so lucky I have stood on the cliffs above the Pacific coast and watched the waves crash on a rocky beachย with purple sand.ย  Iโ€™m so lucky I can say Iโ€™ve watched a waterfall soar 800 feet down to the beach.ย  The drive down to Big Sur along Highway 1 is breath-taking.ย  My favorite part is the stretch along the coastย where strawberries andย artichokes grow on the back sides of the sand dunes.ย  I love stopping at road side stands for fresh fruit and vegetables.ย  No trip is complete without a stop at Pezziniโ€™sย to get a bag of 12 artichokes for $1.ย  Yesterday, I also picked up a flat of strawberries.ย  Most people think of strawberries as being in-season only in the spring, however, the central coast of California grows strawberries almost year-round.ย  (Aย few months out of the year, strawberry production moves to Arizona).ย  I guess I should tell yโ€™all now that I work in agriculture (if itโ€™s not already obvious).ย  So before pumpkin desserts start taking over your oven, make a strawberry dessert one last time.ย  Itโ€™ll be worth it, I promise.

Cream Cheese Pound Cake with Strawberries

3 tablespoons unsalted butter
1 ounce cream cheese
1/2 cup sugar
1 large egg
1/2 teaspoon vanilla
1/2 cup unbleached flour
1/8 teaspoon baking powder

10 ripe strawberries (or as many as you like), sliced
1ย teaspoons sugar
1 teaspoon lemon juice or Frangelico

Before baking a pound cake, I recommend setting out all ingredients on the counter and allowing them to come to room temperature.ย  Butter a 5 ยพโ€ x 3โ€ x 2โ€ mini loaf panย ย ย  Preheat the oven to 350ยฐ.ย  In a medium bowl, beat together the butter, cream cheese and sugar with an electric mixer.ย  Beat very well (about 3-5 minutes) until the sugar is fully incorporated and the mixture is pale yellow and fluffy.ย  Next, add the egg and vanilla and continue beating.ย  Add the baking powder and half of the flour.ย  Add the remaining flour and mix just until combined.ย  Scrape batter intoย the pan and bake on a cookie sheetย for 42-45 minutes, or until a toothpick inserted comes out clean.ย  Before you plan to serve the pound cake, mix the strawberries, sugar and lemon juice or Frangelico and let macerate for 30 minutes.ย  Serve fat slices of the pound cake with juicy strawberries.ย  Garnish with whipped cream if desired.

    I have made many recipes from your blog and this might be my favorite. I made the recipe as written but split the batter between two wells of my mini-Bundt pan. 20 minutes at 350 was perfect. They are so adorable and tasty! Thank you for another amazing recipe, Christina!
