Made more frosting than was needed for cupcakes but that was okay. Agree with the other reviewer that it ended up making 10 cupcakes. Only change I made was to smash up some strawberries and use the juice in the frosting to make it more pink in color. Told the older kids at our party that the cupcakes were “pancake” cupcakes (that’s what the cake portion actually tasted like with the maple syrup) to explain they were a bit different from the cupcakes they might be used to. Super easy & yummy. Babygirl and hubby really enjoyed them. I’m not a ‘natural baker’ so I loved how simple this was. Haven’t tried the frosting yet but willl report back tomorrow! Btw I used oat milk and it turned out perfect!

The cake turned out great but I could not figure out how to make the frosting. I followed the instructions exactly and it kept coming out curdled (I tried twice) and wouldn’t turn into the nice, creamy consistency you want for frosting. So, I had to use store bought frosting.

I didn’t make them for a baby, I made them for myself — I love the taste of maple syrup. I didn’t make any changes or substitutions. I will say (I measured pretty carefully) these made 10 cupcakes and probably I should have done 11, they were pretty full when baked — no complaints from me about extra cupcakes though! I didn’t make the frosting so I can’t comment on that, I like mine unfrosted, but the cakes themselves were perfect.
